35 Days of Favorites: Lunch

I’m going to cheat a little bit on this one – I have two favorites when it comes to eating lunch.

The first is a little bit of a chicken salad that I mixed up one day, and then loved it so much, I eat it almost every day.

It’s super-simple, as is most of the food I make. Cooked chicken, chunks of cucumber and red pepper, mixed with a dressing of olive oil, salt, garlic, and basil. That’s it! Quick to make, and I always make sure I have cooked chicken in the freezer so it’s ready and easy.

My other favorite is a weird-looking one, but try to get past it’s appearance! It’s so delicious!

If you like avocadoes, you’ll love this. It is SO FAST to make, very creamy, and tasty! (You can get the recipe here.)

I’ve even tried it with raw zucchini noodles, which are strange but surprisingly good!! I just used a potato peeler to make a plateful of thin long strips.

Pour on your favorite pasta sauce on, and dig in. Taste-wise, I couldn’t tell I was eating zucchini instead of pasta. It has a very slight crunchiness to it, but steaming it for a few minutes would probably take care of that. I don’t, because I like the fact that I’m eating a raw lunch.

Along with the avocado sauce, I love adding hemp seeds on top. They add tons of protein, and have a very nice flavour.
